This is a Geisha variety from Finca La Mimada, located at 1500 masl in Santa Clara, Panama. The legend, Mario Lezcano processes this coffee using an innovative method called Kviek yeast fermentation. Kviek yeast, typically used in beer production, thrives in high temperatures around 40°C. This can shorten fermentation time to preserve more sweetness and organic acid.

Mario carries out a lactic fermentation with the Kviek yeast in a sealed tank for two days at around 40°C, which gives this Geisha a significant grape and citrus flavor, along with a smooth, juicy texture. Afterward, the cherries are dried in a dark room for over 30 days, slow drying creates a clean and elegant aftertaste to this coffee.
